Banana Protein Pancakes with fresh cherry sauce

I LOVE this recipe for protein pancakes!  I've tried a few different ones and have experimented with different ingredients, but always come back to this one.  When I started making them, I would top them with sliced bananas, berries,a drizzle of honey and sprinkled with cinnamon.  It is ridiculously delicious, and really a great pre-workout meal for me, full of protein and carbs.


Recipe for Banana Vanilla Protein Pancakes


Ingredients:
1 1/2 cup old fashioned oats
1/2 cup fat-free cottage cheese
1/2 scoop vanilla protein powder
1 very ripe banana, mashed
1/4 cup milk
1/4 teaspoon vanilla extract
1 egg
1 TBSP flax seed

Directions:
Heat pan or griddle to a low-medium heat and spray with cooking spray
Throw all ingredients into the blender and blend away to a "batter like" consistency.
Pour batter onto griddle and cook for approximately two minutes per side

Makes 6 pancakes.

Well, recently I've been in a cherry mood, because they are so fresh, sweet and in season right now.  I had a bunch in the refrigerator and thought it would be fantastic to make a sauce with them to top my pancakes with this morning.  I wanted it to be a sugar free sauce, so came up with the following recipe and it was a hit for sure!  I used my standard protein pancake recipe above and created this for the sauce.

Fresh cherry sauce

Ingredients:
1 1/2 cups fresh, pitted cherries
1/8 cup honey
1/8 cup water
few dashes cinnamon
1/4 tsp vanilla extract

Directions:
After cleaning and pitting the fresh cherries, slice them in halves and place them in a saucepan over medium high heat.  Stir them occasionally for about 10 minutes, then add honey and water and continue cooking for another 5 minutes or so.  Place 3/4 of the cherry mixture in a blender and blend until smooth.  Place puree'd cherry mixture back into the saucepan with the rest of the cherries, continue to stir over low heat for another couple of minutes.  Remove from heat and stir in the cinnamon and vanilla.  Serve warm over pancakes.

This sauce would be delicious over frozen yogurt as well!

  2. MMMM looks wonderful :) My little girls 4 and 6 had to be put on a strict diet due to health issues. We are pretty healthy before but have been put on the alkaline diet because of their ph balances. Is there anything you can substitute for the cottage cheese that isn't dairy, but isn't processed and is a "clean" food?
