Healthier Dark Chocolate Muffins



I guess it's muffin week in my house, because this is the second batch of muffins I've made in the past 3 days.  In case you missed the post earlier in the week, you may want to head over and check out the Banana Oatmeal Chocolate Chip muffins that were consumed immediately upon removal from the oven by my sons and their buddies.

Banana Oatmeal Dark Chocolate Chip Muffins

A healthy muffin?  Yep, it exists and I found the ultimate recipe on pinterest of course.  I changed it up a bit because I never follow a recipe as written (curse of being a "foodie").  And I can officially say this is one of the best health food muffins I have ever eaten.  No all purpose flour, no whole wheat flour, no refined sugar............sigh...........A clean eaters muffin paradise.  The sweetness from the banana and honey is just so special........I love you little muffin!

Now, although I call these muffins, due to the fact that I used almond flour, you are not going to get that standard muffin top, and these are going to be more flat.  No big deal, right??  Let's just call them a cup instead of a muffin to be politically correct.  I mean who wants a "muffin top" anyway, and at only about 130 calories/serving you don't have to feel one bit guilty about eating one of these beauties.  You've got a powerful protein punch in these little guys too! SCORE!

Spicy Asian Salmon Burger w/ Avocado Yogurt Sauce

Lately, when I've been visiting my Mom we've been getting delicious pre-made salmon patties at Whole Foods.  But as you know, if you've been following me for any length of time, I LOVE my time in the "test kitchen" and I've been wanting to experiment with salmon patties for awhile.  Now, before I go on, let me give you the definition of my test kitchen.

Test Kitchen - noun - (/test/ /kitch-en/)
A place where I go when my 2 young sons are not beating one another up, screaming for food, water, help, or otherwise just consumed with doing something else besides being under my feet (ie. playing their Ipods, watching TV, chasing the cat, reading or quietly plotting together their next "adventure" which hopefully will not end up with stitches or a trip to the ER.)
How do I use in a sentence?  I go to my TEST KITCHEN when I want to get away from all of my responsibilities and make something really kick ass, clean, delicious and healthy.  AKA, my happy place......

Getting Serious in September

If you have been following my Facebook page for awhile, then you know that every month I put together a little challenge for anyone to take part in if he/she wishes. In the past, we've done burpees, we've planked, done wall sits, pistol squats, focused on our abs, drank a ton of water, etc.  Well, this month, I'm going to try something a little different........

This challenge is serious, and it's for those that are ready to get serious.  Are you serious about losing weight?  Maybe you are struggling with maintaining your weight?  Maybe you are just serious about getting more healthy?  Maybe you want to increase your strength?  Well, then this challenge is for you.
